THE ROLE

We are hiring a Prep Chef / Catering Sous Chef to own our in-house food program from purchasing through final plating. You will be the sole culinary team member responsible for preparing our full high tea menu to serve 40–60+ guests per operating day across two tours.

This is a hands-on production role. You will prep, bake, assemble, plate, package, and ensure every item meets our presentation and quality standards before it goes on the bus. Our menu is fixed and repeating — we are looking for someone who finds satisfaction in doing the same things exceptionally well, every single time.

WHAT YOU’LL BE MAKING

Our menu is a classic British high tea spread adapted for the Las Vegas experience. You will be preparing:

SAVORY

  • Cucumber & Radish Tea Sandwiches (crustless, dill cream cheese)
  • Caprese Cups (cherry tomato, mozzarella, basil pesto)
  • Turkey & Swiss Wraps (dijonnaise, spinach tortilla)
  • Salmon Crostini (smoked salmon, cream cheese, mini bagel)
  • Hummus & Vegetable Shooters
  • Deviled Eggs
  • Mini Lobster Rolls (Premium tier — chilled Maine lobster, spicy aioli)

 

SWEETS & BAKED GOODS

  • Brownie Bites (white chocolate drizzle)
  • Mango Mousse Cake (double-layered, fresh mango glaze)
  • Raspberry Mousse Cake (double-layered, strawberry glaze)
  • Chocolate-Dipped Strawberries (white & dark chocolate)
  • Assorted Macaroons
  • Blueberry Scones (served with butter and jam)
  • Cannoli
  • Cheesecake (Premium tier)

Important: The kitchen does not have a grill or hood. All items are cold prep, oven-baked, or assembly-based. No open-flame cooking is required.

RESPONSIBILITIES

  • Prepare the full high tea menu for 40–60+ guests per operating day (two tours), ensuring every item meets quality and presentation standards
  • Manage all food purchasing and ingredient sourcing, including placing orders with wholesale suppliers (Restaurant Depot, Sysco, or similar) and maintaining vendor relationships
  • Maintain accurate inventory, minimize waste, and keep food costs within budget
  • Batch-prep items efficiently across the weekly schedule — some items can be prepped a day ahead, others must be prepared same-day for freshness
  • Plate and package all items for transport to the bus departure point at Sahara Hotel, ensuring food arrives in pristine, guest-ready condition
  • Maintain strict food safety and sanitation standards in compliance with the Southern Nevada Health District
  • Keep the kitchen clean, organized, and inspection-ready at all times
  • Coordinate with the operations manager on daily guest counts and tour manifests to determine exact quantities needed
  • Manage timing so all food is fully prepped and packaged before each tour departure
  • Flag any quality issues, ingredient substitutions, or supply chain problems proactively — never let a problem reach the guest
  • Contribute ideas for menu improvements, seasonal additions, and cost-saving opportunities

 

REQUIREMENTS

  • Minimum 2 years of professional kitchen experience in a prep, production, pastry, or catering environment
  • Strong baking skills — you must be comfortable and consistent with scones, brownies, macaroons, mousse cakes, and cheesecake
  • Experience with cold prep and assembly of canapés, tea sandwiches, or similar fine presentation items
  • Ability to work independently with minimal supervision — you will be the only culinary team member
  • Current Southern Nevada Health Card (Food Handler Safety Training Card) or willingness to obtain within 30 days of hire
  • Understanding of food cost management, portioning, and waste reduction
  • Reliable transportation to the kitchen location in Las Vegas
  • Physically able to stand for extended periods, lift up to 40 lbs, and work in a kitchen environment
  • Available to work Thursday through Sunday consistently, including holidays and peak tourist weekends
  • Takes pride in presentation — every plate should look like it belongs in a photo

 

PREFERRED QUALIFICATIONS

  • Experience in catering, banquet production, pastry, or high tea service
  • Familiarity with British or European tea service traditions and presentation standards
  • Experience working in a commissary or off-site production kitchen
  • ServSafe Manager certification
  • Experience sourcing from wholesale suppliers and managing food budgets
  • Culinary degree or certificate from an accredited program (helpful but not required — skills and consistency matter more)

You will work a predictable 5-day schedule preparing a fixed menu for a premium guest experience. You will see the direct impact of your work every time a guest posts a photo of your food on social media. And you will be building something from the ground up as the first in-house culinary hire for a growing Las Vegas brand.
