About the Role
We are seeking a motivated, hands‑on Sous Chef to support the daily operations of our kitchen and work closely with the Chef de Cuisine and Culinary Director. The Sous Chef plays a critical leadership role on the line, helping maintain food quality, consistency, and kitchen standards while supporting team development and operational efficiency.
Key Responsibilities
Kitchen Leadership & Execution
Support the Chef de Cuisine and Executive Chef in all day‑to‑day kitchen operations
Act as a hands‑on leader on the line during service, including expediting when needed
Ensure consistent execution of recipes, plating, and timing across all stations
Lead daily prep, service, and closing procedures
Step into full kitchen leadership in the absence of senior chefs
Team Development & Training
Supervise, coach, and support line cooks and prep cooks
Assist with hiring, onboarding, and training of BOH staff
Help maintain a positive, professional, and collaborative kitchen culture
Address performance issues through coaching and clear communication
Operations, Ordering & Cost Control
Assist with ordering, inventory management, and vendor communication
Support food cost control, waste reduction, and proper pars
Monitor prep levels and productivity to align with service demands
Help manage schedules, timecards, and labor efficiency as needed
Food Safety & Standards
Uphold all NYC Department of Health and food safety standards
Maintain cleanliness, organization, and sanitation throughout the kitchen
Ensure all BOH staff adhere to proper food handling and storage procedures
Qualifications
2–4+ years of professional kitchen experience, including leadership or senior line roles
Strong cooking fundamentals and ability to execute under pressure
Experience working in high‑volume and/or quality‑focused kitchens
Solid organizational and communication skills
Ability to lead by example and remain calm during busy service
NYC DOH Food Protection Certification preferred (or willingness to obtain)
