SUSHI CHEFS — SENDO GREENWICH VILLAGE (43 W 8TH ST)

We just opened our newest location in Greenwich Village at 43 W 8th St, and we are busy!  Sendo is a Tokyo-inspired sushi concept built on craftsmanship, hospitality, and consistency, with a focus on premium rice, traditional ingredients, and refined execution. We are hiring experienced Sushi Chefs.

Key Responsibilities
• Execute Edo-mae omakase service at the counter with consistent, refined technique
• Engage with guest interaction and hospitality throughout service
• Work collaboratively with other chefs to maintain consistency, pacing, and quality every shift
• Perform fish handling to a high standard, including breakdown, portioning, curing, aging, and storage
• Prepare sushi rice to exact standards, including texture, temperature, seasoning, and timing
• Maintain an immaculate station, tools, and presentation throughout service
• Coordinate pacing closely with chefs and FOH to enhance the guest experience
• Uphold strict sanitation, food safety, and product handling standards at all times
• Support prep, organization, inventory awareness, and waste minimization
• Contribute to a positive, professional kitchen culture

What We’re Looking For
• Edo-mae sushi fundamentals are required
• Minimum 5 years of sushi chef experience in high-volume restaurants is required
• Strong knife skills and confidence with fish butchery and portioning
• Professional and engaging guest experience
• Exceptional cleanliness, organization, and consistency
• Team-oriented mindset
• Fluency in Japanese is a big plus
• Deep knowledge of Japanese cuisine, seasonality, and traditional technique is a major plus
