Chef de Cuisine (CDC) — One40 Rooftop

One40 Rooftop is seeking a strong, organized, and service-driven Chef de Cuisine to lead the daily operations of our upscale Modern American rooftop restaurant located in Manhattan’s Financial District overlooking the 9/11 Memorial.

We are a high-volume, hospitality-focused restaurant with a strong emphasis on execution, consistency, atmosphere, and elevated yet approachable food.

We operate multiple dayparts including breakfast, lunch, happy hour, dinner, brunch, private events, and rooftop activations. We are looking for a leader who can bring structure, calmness, accountability, and strong kitchen systems to a fast-paced operation.

Responsibilities
  • Lead all day-to-day kitchen operations
  • Manage and mentor sous chef, line cooks, and prep teams
  • Maintain consistency, quality, cleanliness, and organization
  • Oversee prep systems, ordering, inventory, and scheduling
  • Execute high-volume services while maintaining standards
  • Collaborate with FOH leadership and ownership
  • Assist with menu execution, seasonal changes, and events
  • Maintain food cost and labor targets
  • Uphold DOH standards and kitchen discipline
Qualifications
  • Previous CDC or strong Sous Chef experience in NYC
  • Experience in high-volume upscale restaurants
  • Strong organizational and leadership skills
  • Calm and professional under pressure
  • Strong understanding of Modern American cuisine
  • Experience with brunch, dinner, and event operations preferred
  • Ability to lead by example and build team culture
  • Hands-on operator with attention to detail
