About Laurel Bakery

Laurel Bakery is the bakery project of Redwood Hospitality, the Brooklyn-based hospitality group behind Michelin-starred Oxalis, Place des Fêtes, Cafe Mado, and Golden Ratio.

Originally launched in 2024, Laurel quickly developed a deeply loyal following and became known for its breads, pastries, and viennoiserie throughout Brooklyn’s restaurant and bakery community. Following a temporary pause in operations in 2026, Redwood Hospitality is now preparing for Laurel’s next chapter with a clearer operational vision, a more disciplined production model, and a renewed focus on building a durable long-term business.

We are currently seeking an experienced Head Baker / Baker Managing Partner to help lead that next phase.

This role is not simply about producing exceptional breads and pastries. We are looking for a baker with a sophisticated understanding of bakery operations, production management, labor structure, scheduling, forecasting, and financial discipline — someone excited not only by craft, but by helping build and operate an exceptional bakery business thoughtfully and sustainably.

For the right candidate, this role will evolve into a long-term operating partnership with equity participation.


The Opportunity

Laurel’s next iteration will be intentionally more focused, operationally disciplined, and strategically structured than the first.

As part of this relaunch, we are reassessing the business around:

  • Smarter and more efficient production systems
  • A more balanced product mix beyond highly labor-intensive laminated production
  • Increased emphasis on breads, cookies, cakes, loaves, savory items, and adaptable retail pastry programs
  • A more strategic wholesale model with reduced production cadence and carefully selected accounts
  • Stronger labor management, production forecasting, and operational oversight
  • A healthier balance between retail, wholesale, and internal restaurant support

Redwood Hospitality will remain highly involved operationally and financially in the business. We are not seeking a hands-off consultant or isolated bakery lead — we are seeking a collaborative operating partner who wants to help shape and grow Laurel alongside an active hospitality group deeply invested in its success.


Salary:
$80,000–$100,000+ depending on experience and scope
Equity Participation: Potential equity or profit-sharing opportunities for the right long-term partner

What We’re Looking For

The ideal candidate has extensive experience leading professional bakery operations and understands both the creative and operational realities of running a successful bakery business.

We are especially interested in candidates who:

  • Have experience managing high-volume or production-driven bakery operations
  • Understand production scheduling, labor deployment, pars, and capacity planning deeply
  • Have strong financial awareness around labor cost, food cost, margins, and operational efficiency
  • Can balance quality, consistency, and operational sustainability
  • Have experience building systems, SOPs, training structures, and production organization
  • Are highly organized, disciplined, and proactive problem-solvers
  • Communicate clearly and lead teams professionally and collaboratively
  • Are excited to help rebuild and refine a bakery business thoughtfully — not simply inherit one
  • Bring a long-term mindset and genuine interest in partnership and ownership

Strong preference will be given to candidates with prior leadership experience overseeing bakery teams, managing production systems, and participating in broader operational or financial decision-making.

Core Responsibilities
Leadership & Team Development

  • Recruit, train, mentor, and lead bakery staff across bread, pastry, and production
  • Build a positive, accountable, and highly professional bakery culture
  • Establish strong production systems, communication structures, and daily operational rhythms
  • Develop training systems and SOPs to ensure consistency and scalability
  • Manage scheduling and labor deployment in alignment with labor targets and production capacity

Production & Operations Management

  • Oversee daily bakery production across retail, wholesale, and internal restaurant channels
  • Build and maintain production schedules that prioritize efficiency, consistency, and labor discipline
  • Maintain high standards across breads, pastries, viennoiserie, cookies, cakes, and seasonal offerings
  • Continuously evaluate workflow, pars, prep systems, and production capacity
  • Adjust production levels dynamically based on seasonal demand, sales trends, and business needs
  • Collaborate closely with Redwood leadership on operational strategy and long-term planning

Financial & Administrative Oversight

  • Monitor labor, food cost, waste, and production efficiency
  • Help develop operational systems that support long-term profitability
  • Manage ordering, inventory, vendor relationships, and cost controls
  • Participate in budgeting, forecasting, and strategic planning conversations
  • Evaluate wholesale opportunities strategically to ensure operational sustainability and alignment with production capacity
  • Oversee equipment maintenance and coordinate repairs and preventative upkeep

Product Development

  • Refine and evolve Laurel’s product mix with an emphasis on both quality and operational sustainability
  • Develop seasonal and retail-driven offerings aligned with Laurel’s identity
  • Collaborate with Redwood culinary and beverage teams on cross-venue projects and seasonal programming
  • Balance innovation with executional consistency and operational practicality

Health, Safety & Compliance

  • Maintain rigorous food safety and sanitation standards
  • Ensure compliance with NYC Department of Health regulations and allergen protocols
  • Conduct regular inspections and maintain readiness for DOH visits
  • Ensure all staff follow sanitation and safety SOPs consistently
  • Promote a safe and organized working environment for the entire team
