Il Buco al Mare, in the Hamptons, is seeking an accomplished Seasonal Sous Chef to join our culinary team for the Summer 2026 season: anticipated May–November, timing may vary based on operational needs. This role is for a chef who respects tradition, values seasonality, and takes pride in executing thoughtful, coastal cuisine at the highest level.

Working alongside a passionate culinary team, the Sous Chef will help bring to life a menu rooted in the Mediterranean-celebrating local seafood, peak-season produce, ancient grains, and the honest flavors of the wood-burning oven. We are looking for a leader in the kitchen: calm under pressure, meticulous in execution, and deeply committed to quality, consistency, and mentorship.

MAIN RESPONSABILITIES INCLUDES:

  • Supervise and mentor line, prep, and porter teams
  • Work all stations as needed to support service and standards
  • Oversee mise en place, quality control, and proper seasoning
  • Ensure HACCP compliance, documentation, and organized storage
  • Coordinate with food runner and FOH for precise course timing
  • Maintain equipment and facilities with the Chef de Cuisine
  • Assist with hiring, training, and team development
  • Support menu development, recipe writing, costing, and technique refinement

Qualifications
  • Minimum 4 years of leadership experience as a Sous Chef in a high-volume setting.
  • Valid Food Handler’s Certification for both Suffolk County and NYC.
  • Strong leadership skills with a team-oriented, collaborative management style.
  • Excellent communication, organizational, and interpersonal skills.
  • Language Requirements: Fluency in English is required (for menu reading, written communication, and documentation). Spanish proficiency is strongly preferred to effectively communicate with the kitchen team.
  • Flexible availability: early mornings, nights, weekends and holidays.
  • Ability to work under pressure, problem-solve, and adapt in a fast-paced environment.
  • Willingness to accept and implement feedback constructively.

Physical Demands

  • Ability to lift up to 25 lbs frequently and up to 50 lbs occasionally.
  • Standing for 4 to 8 hours per shift with occasional bending and reaching.
  • Ability to work in a Kitchen environment with varying temperatures.
