About the Role

Supermoon Bakehouse is looking for a dependable and organized AM Baker to lead our early morning bake off shift. This role begins at 4 AM and is responsible for overseeing daily bake off, finishing and decorating pastries, maintaining product quality, and supporting small production tasks.

This position works closely with and reports directly to the Pastry Sous Chef and Head Chef.

Core Responsibilities

  • Own and execute the daily bake off shift from start to finish
  • Bake croissants, cruffins, danishes, breads, cookies, and other pastries to company standards
  • Finish, decorate, fill, glaze, and garnish pastries for daily service
  • Complete small production and prep tasks as assigned
  • Maintain pars and communicate shortages or production issues to leadership
  • Help maintain a clean, organized, and efficient production space
  • Follow all food safety standards and maintain DOH compliance logs
  • Support smooth daily operations and maintain consistent product quality
  • Assist with training and supporting junior bakers when needed
  • Work early mornings, weekends, and holidays as required

What You Bring

  • 1 year of experience in a high-volume bakery environment
  • Strong understanding of pastry bake off, proofing, and finishing techniques
  • Ability to work independently and efficiently during early morning shifts
  • Strong attention to detail and consistency
  • Positive attitude and strong communication skills
  • Ability to multitask in a fast-paced environment
  • Ability to lift, stand, and work in a physically demanding kitchen environment
  • NYCDOH Food Protection Certificate (or willingness to obtain)

Schedule

  • Early morning start time (4 AM)
  • Weekend and holiday availability required
